I’ve made variations of no bake cheesecake for years. Citrus curds go great with rich base cheesescakes. Lemon, lime, or orange can stand alone or together for flavor.
For this cheesecake I chose tangerines! Tangerine brings the best citrus sensations of tangy and sweet in one bite.

Pretzels give the needed crunch factor benefitting smooth desserts.

Tangerine Cheesecake Pretzel Cups

Ingredients
  

tangerine curd

  • 1/2 cup strained tangerine juice (about 5 tangerines)
  • 3/4 cup sugar
  • 1/2 teaspoon vanilla (I used Taylor and Colledge bean extract)
  • 1 egg
  • 1 egg yolk
  • 5 tablespoons unsalted butter

cheesecake

  • 8 ounces cream cheese softened
  • 1 teaspoon vanilla
  • 1/2 cup sugar
  • 1/2 cup heavy cream

crust

  • 4 ounces butter
  • 1/4 cup brown sugar
  • 1 cup pretzels broken into small pieces

Instructions
 

curd

  • In a 2-quart saucepan, whisk together tangerine juice, sugar and vanilla. Whisk n egg and egg yolk.Cook over medium-low heat for about 1 minute. Scrape down sides often. Remove from heat and stir in butter. Return to stove and cook over low heat for about 2 minutesstirring often. Cook until mixture thickens and bubbles begin to form. Pour curd into a bowl a gently press plastic wrap over the surface to prevent water from forming. Chill at least a hour efore using.

  • Microwave butter in a microwave safe bowl at 30 second intervals until melted. Stir in brown sugar. Add pretzel pieces.

  • Cream together cream cheese, vanilla and sugar until smooth. set aside,
  • Add heavy cream and whip until smooth.

assemble

  • Add about 1 tablespoon of mixture to individual glasses or press mixture about 1/2-inch deep into any sized serving dish.
  • Spoon or pipe in cheesecake mixtue. Top with chilled curd.

    I love the uniqueness of Meyer Lemons! These lemons offer a touch of sweetness without sacrificing lemon flavor. I think I taste a bit of orange too. Melissa’s Meyer Lemons brighten any meal from soups to dessert.

    Cardamom Lemon Mousse

    Servings 6 each

    Ingredients
      

    • 1 cup heavy cream
    • 1/4 cup powdered sugar
    • 2 teaspoons vanilla
    • 1/2 cup frozen lemonade concentrate
    • 1/4 cup Meyer lemon juice
    • 1/4 cup sugar
    • 1/2 teaspoon cardamom
    • 1 packet unflavored gelatin

    Instructions
     

    • In a cold bowl, whip cream, powdered sugar and vanilla together to form stiff peaks. Set aside and keep cold.
    • Bring juice, sugar, lemonade concentrate, gelatin amd cardamom to a boil, whisking constantly until thickened. Cool. Fold in cream mixture. Chill until firm.

    I like to cook and bake with fresh squeezed juices. Citrus brightens the recipe so I use it whenever I can.

    Ingredients
      

    muffin

    • 1/4 cup unsalted butter, softened
    • 3/4 cup sugar
    • 1 egg, beaten
    • 1/3 cup milk
    • 1/2 teaspoon vanilla
    • 1/4 cup blood orange juice strained (2 to 3 oranges)
    • 1 cup flour
    • 1/2 teaspoon cardamom
    • 1 teaspoon baking powder
    • 1/4 teaspoon salt

    • 1 cup flour
    • 1/2 cup cold unsalted butter, cut into pieces
    • 1/2 cup brown sugar
    • 1/4 cup sugar

    Instructions
     

    muffin

    • Preheat oven to 350 degrees. Grease and flour large cup muffin pan. Set asdide. In a medium sized bowl, cream together butter and sugar. Add milk, juice, egg and vanilla.
    • In a separate bowl, mix flour, cardamom, baking powder and salt. Add half dry ingredients to wet mixture, stir. Repeat with reaining wet mixture.

    • Mix together flour and sugars. Fold in cold butter and mix to form crumbs. Set aside.

    bake

    • Fill prepared pan cups with 1/4 cup batter. Bake at 350 for aboout 15 to 20 minutes or until inserted toothpick comes out clean. Sprinkle crumbs over muffins. Cool muffins several minutes in paan before moving to a rack to cool. Add addintional crumbs to cooled muffins.
